To capture the freshness of summer squash, try this raw zucchini salad.

Using a vegetable peeler, shave ribbons of zucchini lengthwise down the squash. In a separate bowl, whisk together a dressing of olive oil, lemon juice, salt, and a pinch of sugar (if you like). Toss the zucchini in the dressing, then sprinkle with pine nuts, crushed red pepper, and basil. Add some shaved Parmesan, if you like.
