Raw Beet Salad with Lemon and Olive Oil
One of subscriber Blake's favorite recipes is this very simple beet salad. For the beet-averse eaters in your home, this salad might be the answer. This salad holds up well for many hours, even overnight. Try experimenting with different combinations beets (red, golden, chioggia), a mixture of carrots and beets, or even adding a Granny Smith or other tart apple to the salad for a little variety!
Grate one or more large beets on the large-hole side of a box grater. Toss with lemon juice, olive oil, salt, and pepper to taste. For a bit more spice, try adding crushed red pepper flakes.
